This is Grandma Cook's banana bread recipe. Mom uses this for banana muffins. She always has these on hand for when grandkids come!

Ingredients:
3/4 C butter
1 1/2 C sugar
1 1/2 C mashed bananas (approx 3) **if you use ANY extra banana, you need to calculate out extra of other ingredients to balance out the flavor. Otherwise, they are too strong flavored**
2 eggs
1 tsp vanilla
2 C flour
1 tsp baking soda
1 tsp salt
1/2 C buttermilk (or, 1 tsp vinegar or lemon juice + enough milk to make 1/2 C)
Directions:
Preheat oven to 400 deg
Cream butter and sugar. Add remaining ingredients and mix until fully incorporated
Using ice cream scoop, fill into muffin tins and bake 15-20 minutes or until golden brown
