Beef Enchiladas

Ingredients:

2 lb ground beef

2 packets taco seasoning

1 1/2 C water

1 can refried beans (optional)

18 medium tortillas

1 can mild red enchilada sauce

1 can green enchilada sauce

3-4 C monterey jack or other shredded cheese


Directions:

  1. Brown hamburger. Add taco seasoning and water. Add beans (optional)

  2. Enchiladas: Down the middle of each tortilla, add a scoop of meat mixture and top with shredded cheese. Roll up and place in 9x9 pan. Fill all tortillas (fills 3, 9x9 pans with each pan holding approx 6 tortillas - works great for freezing additional future meals)

  3. Cover each pan with 1/3 of the enchilada sauces (mix them together) and top with more shredded cheese

  4. Bake at 350 deg until cheese is browned and bubbly, approx 35 minutes for enchiladas

  5. Casserole: Place 2 layers of tortillas to cover the bottom of a greased 9x13 pan. Layer with 1/3 beef mixture, cheese, and repeat with tortillas, beef, and cheese until all ingredients have been used. Top with enchilada sauce and additional cheese

  6. Bake at 350 deg until cheese is browned and bubbly, approx 45 minutes for casserole

  7. Serve over rice and top with desired toppings (lettuce, salsa, hot sauce, sour cream, avocado, etc)
