Cheesy Potato Soup

Ingredients:

1/2 small-medium onion, diced

1 C diced carrots

1/2 tsp minced garlic

5-6 C chicken broth

dash onion powder, garlic powder, celery salt, rosemary, thyme

2-3 large potatoes, diced

1 can corn, drained

1/2 lb bacon, baked and diced

1 C heavy cream mixed with 1-2 Tbsp cornstarch

1 C shredded cheddar cheese


Directions:

  1. Sauté onion and carrots in butter until translucent. Add rest of ingredients except heavy cream and cheese

  2. Simmer 30-60 minutes

  3. Add cream mixture and cheese, warm together and serve
