Crispy Parmesan Potatoes

Ingredients:

1/2 C parmesan cheese (finely grated)

1/2 tsp garlic powder

1/4 tsp paprika

1/2 tsp oregano

1/2 tsp kosher salt

3/4 tsp pepper

2 Tbsp olive oil

1 1/2 lbs baby potatoes, halved


Directions:

  1. Preheat oven to 400 deg

  2. In a small bowl, combine cheese and spices

  3. Pour olive oil into 9x13 glass baking dish and evenly coat the bottom

  4. Sprinkle cheese mixture to cover the bottom of the pan, spreading evenly

  5. Arrange potatoes in a single layer, cut side down, on top of cheese mixture. Press down to ensure potatoes are flat and in contact with the cheese layer

  6. Bake 30-40 minutes or until cheese is browned and potatoes are soft when pressed with a fork

  7. Let rest for 5 minutes before serving
