Ginger Cookies

Ingredients:

1 C sugar

3/4 C shortening

1/4 C molasses

1 egg

2 1/4 C flour

1 1/2 tsp baking soda

1 Tbsp ginger

1 tsp cinnamon

1/4 tsp salt


Directions:

  1. Mix sugar, shortening, molasses, and egg in mixer. Stir in dry ingredients

  2. Cover and place in refrigerator for 1 hour

  3. Preheat oven to 375 deg. Using small Tbsp sized balls of dough, dip in sugar and place on cookie sheet

  4. Bake 10-20 minutes until edges are done. Center should be soft

  5. Remove from cookie sheet immediately to cool on wire rack
