Homemade (Healthy) Marshmallows

Ingredients

1/2 C cold water

2 1/2 Tbsp powdered gelatin

1/2 C warm water

1 1/4 C maple syrup

1/8 tsp sea salt

1 tsp vanilla paste or vanilla extract

Arrowroot starch or powdered sugar, for dusting


Directions

  1. Line 8-9" pan with parchment paper and sprinkle lightly with the arrowroot starch or powdered sugar

  2. In stand mixer with whisk attachment, place 1/2 C cold water with the gelatin. Mix well so it 'blooms'

  3. In saucepan, place the other 1/2 C water with maple syrup and salt. Stir to combine

  4. Cook over medium heat and bring to a moderate boil. DO NOT STIR IT

  5. Boil until it reaches 242 deg F (15-20 min), then remove from heat. Next step you need to move quickly to incorporate the warm mixture into the gelatin

  6. Turn the mixer on low and immediately (but slowly) stream the syrup into the mixer. Mix 30-60 seconds

  7. Add in vanilla

  8. Turn the mixer on medium-high - this takes 5-10 minutes. Look for the mixture to triple in size, cool down to the touch, and have soft peaks

  9. Once it hits this stage, move QUICKLY (you have about 30 seconds) to scrape the marshmallow into your prepared pan before it starts to set

  10. Let sit at room temp for 4 hours (approx)

  11. Remove from pan using the parchment paper and cut into squares. You can dust the tops and sides with powdered sugar as well if you would like (we do not, they tend to be sweet enough)
