Ingredients:
1/4 C bacon, diced
2 Tbsp butter
1-2 C mirepoix
1 tsp minced garlic
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp rosemary
1 tsp thyme
1/4 tsp pepper
2 C chicken broth
3 medium potatoes, peeled and cubed
1 C heavy whipping cream
1/2-1 C shredded cheddar cheese
Directions:
In dutch oven, cook bacon until crispy. Remove bacon.
Add butter, mirepoix, and seasoning and cook through until translucent
Add potatoes and cover, simmering for 15 minutes
Gradually stir in cream and cheese before serving
