Homemade Biscuits and Gravy

Ingredients:

Biscuits:

2 cups all purpose flour

1 1/2 Tbsp baking powder

1 tsp sugar

3/4 tsp salt

1/2 C unsalted butter

1 C half and half

1/2 Tbsp melted butter, to brush the baked biscuits


Gravy:

1 lb ground venison breakfast sausage, browned

1/2 C flour

1 1/2 C whole whipping cream

1 1/2 C whole milk

salt and pepper, to taste


Directions:

Biscuits:

  1. Preheat oven to 450 deg

  2. Mix dry ingredients in medium bowl

  3. Pulse cold butter in food mixer. Add in dry ingredients and pulse until just incorporated

  4. Add cream until incorporated, do not over-work the dough

  5. Turn dough out onto a floured surface. If dough is very sticky, lightly sprinkle the top with flour.

  6. Pat dough into a rectangle and fold into thirds, right side into left. pat out again, rotate 90 deg, and repeat the folding

  7. Pat out into a 3/4-1"thickness throughout, and cut into 8 biscuits

  8. Bake for 12 minutes

  9. Brush tops with melted butter, serve and enjoy!


Gravy:

  1. Brown sausage

  2. Add flour to cooked meat, stir to combine

  3. Over medium heat, add milk and cream, stir constantly to prevent milk from burning

  4. Stir until gravy thickens, serve over top of biscuits
