Homemade Cinnamon Rolls

Ingredients:
2C whole milk
1/2 C vegetable oil
1/2 C sugar
2 1/4 tsp yeast
4 1/2 C flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
Filling: Maple Topping: Caramel Topping:
3 Tbsp butter, melted 1 bag powdered sugar 2 C brown sugar
3/4 C butter, melted 2 tsp maple flavoring 2 C vanilla ice cream
2/3 C sugar 1/2 C milk
3 Tbsp cinnamon 1/4 C melted butter
1/4 C brewed coffee
1/8 tsp salt
Directions:
Mix milk, vegetable oil, and sugar in small sauce pan over medium heat until sugar is dissolved, and mixture reaches 95-100 deg
Remove from heat and sprinkle yeast over the mixture. Let sit for 5-10 minutes to activate yeast
Add dry ingredients to wet and knead for 4-6 minutes
Cover bowl and refrigerate overnight
The following day, roll out into a rectangle. Cover with filling, roll, and cut into 1" pieces
Preheat oven to 375 degrees
Over medium heat, warm brown sugar and ice cream
Pour equally into 3-8"x8" pans
Place rolls over the top of the caramel
Let rolls rise for 30 minutes or until pressed with light pressure and it does not immediately recoil
Bake for 15-20 minutes until browned on top
Makes approx 24 rolls
