Red Velvet Cake

Ingredients
Cake:
2 2/3 C cake flour
1/4 C cocoa powder *unsweetened
1 tsp baking soda
1/2 tsp salt
1/2 C butter, softened
1 3/4 C sugar
2 large eggs at room temp
1/2 C canola or vege oil
1, 1oz bottle liquid red food coloring
2 tsp vanilla
1 tsp vinegar
1 1/3 C buttermilk
Frosting:
12oz cream cheese, doftened
3/4 C butter, softened
3 C powdered sugar
1 1/2tsp vanilla
Directions
Preheat oven to 350 deg
Spray 2, 9-inch cake pans with cooking spray
Mix dry ingredients, set aside
With the paddle attachment on mixer, combine butter and sugar for 4-5 minutes. Add eggs and mix until fully incorporated. Then add oil, food coloring, vanilla, vinegar
Mix in dry ingredients, alternating with buttermilk in 3 separate additions. Make sure to mix until combined without overmixing.
Evenly distribute the batter between the 2 cake pans. Tap on counter to remove any air bubbles
Bake 28-32 minutes until a toothpick comes out clean. Remove from overn and onto a wire rack to cool the pans for 15-20 min
Carefully remove cakes from the pans and place on a wire rack to cool completely
Prepare frosting
Layer: cake, frosting, cake. Then top with frosting to top the entire cake
