Ingredients:
1 1/2 C flour
1/2 C cornstarch
2 Tbsp cornmeal
1 Tbsp baking powder
1 tsp salt
3 large eggs, separated
2 Tbsp sugar
1 3/4 C milk
1/2 tsp vanilla extract
1/2 C butter, melted
Directions:
Preheat waffle maker on medium heat
In a large bowl, mix first 5 dry ingredients
In mixer bowl, beat egg whites until soft peaks form. Add sugar and continue mixing on medium until stiff peaks form
In a small bowl whisk together egg yolks, milk, and vanilla
Stir milk mixture into flour mixture, blend just until ingredients are roughly incorporated - there should be lumps - do not overmix
Stir in melted butter
Fold in egg whites mixture
Use a 1 C measuring cup and pour batter into a hot, greased waffle maker and bake until crispy on both sides
