Homemade Waffles

Ingredients:

1 1/2 C flour

1/2 C cornstarch

2 Tbsp cornmeal

1 Tbsp baking powder

1 tsp salt


3 large eggs, separated

2 Tbsp sugar


1 3/4 C milk

1/2 tsp vanilla extract

1/2 C butter, melted


Directions:

  1. Preheat waffle maker on medium heat

  2. In a large bowl, mix first 5 dry ingredients

  3. In mixer bowl, beat egg whites until soft peaks form. Add sugar and continue mixing on medium until stiff peaks form

  4. In a small bowl whisk together egg yolks, milk, and vanilla

  5. Stir milk mixture into flour mixture, blend just until ingredients are roughly incorporated - there should be lumps - do not overmix

  6. Stir in melted butter

  7. Fold in egg whites mixture

  8. Use a 1 C measuring cup and pour batter into a hot, greased waffle maker and bake until crispy on both sides
