Ingredients:
Sauce:
1 C sugar
1 C vinegar
3 Tbsp soy sauce
6 Tbsp ketchup
Mix in separate bowl:
1/2 C water
1/2 C pineapple juice
4 Tbsp cornstarch
Chicken:
2 eggs
2-3 chicken breasts, cubed
1/2 - 1 C cornstarch
Other:
1 C rice, prepared
1/2 C each of green pepper, red pepper, onion
pineapple
Directions:
Mix sauce ingredients into small saucepan and bring to a boil
Meanwhile, mix water, pineapple juice and cornstarch until dissolved. Add to vinegar mix and allow to boil for at least 1 min, then remove from heat and allow sauce to thicken - stirring constantly
Dip chicken in egg mixture, then roll in cornstarch. Fry until done
Sauté vegetables until done to your desired liking
Layer: rice, chicken, peppers, pineapple, sauce and serve
