Tomato Juice

Save the drained tomato juice from Nelk Salsa to use in this recipe. On average, that yields 1 gallon and 1 Q of juice


(Yields approx 2.25 gallons of juice, or, approx 14 P jars)

Ingredients

1.25 Gallons Leftover Nelk Salsa Juice (has onion and canning salt in it)

approx 1 gallon tomatoes

Lemon Juice - 1 Tbsp / pint jar


Directions:

  1. Clean tomatoes. Remove stems, stocks, and blemishes. Cut into 1/4's

  2. Put tomatoes in a large stockpot with leftover juice. Put on medium heat for approx 1 hour until tomatoes are soft and broken down

  3. Run tomatoes through a food mill to remove skin and seeds

  4. Return to stockpot to bring to a small boil. Ryan added a small sprinkle of garlic and onion powder

  5. Add 1 Tbsp lemon juice into each pint jar

  6. Ladle juice into jars

  7. Water bath for 35 minutes


Bloody Mary mix

  1. Use remaining tomato juice (approx 1 gallon)

  2. Add 1/4 C Worchestershire sauce, 1 tsp minced garlic, 3/4 C celery, 2 jalapenos seeds removed

  3. Add veges to juice, then once they are soft, blend them up and add back into the juice

  4. Add 1 Tbsp lemon juice into each pint jar

  5. Ladle juice into jars

  6. Water bath for 35 minutes
