Universal Bread Dough

500g flour

325g water (65%)

10g salt (0.02%)

7g yeast (0.014%)

10g sugar or honey (0.02%)

40g for cinn rolls

25g for bagels

pinch for pizza dough

Directions:

  1. Mix, then autolyse/rest 15-30 minutes

  2. Knead 6-10 minutes, or stretch and folds every 30 min x2-3

  3. Rise 60-90 minutes (flat bread 30-45')

  4. Can refrigerate for anytime use up to 7-10 days
