Baked Cheesy Chicken Enchilada Penne

Ingredients:

3-4 C uncooked penne pasta

120z VElveeta cut into 1/2" cubes

2 C shredded cheddar cheese

1 C milk

3 cups chicken, baked and shredded

1-19oz can red enchilada sauce

1-4.5 oz can chopped green chiles

1 pkg or 2 Tbsp taco seasoning mix


Directions:

  1. Preheat oven to 375 deg. Spray 9x13 baking dish with cooking spray

  2. Cook pasta as directed on package, using minimum cook time; drain and set aside

  3. In a saucepan, mix cheese cubes, 1 cup of the shredded cheese and the milk until cheese melts and mixture is smooth

  4. Gently stir pasta into cheese sauce. Pour mixture into baking dish

  5. In large bowl, mix chicken, enchilada sauce, green chiles, and taco seasoning mix. Spoon over pasta mixture in baking dish. I covered with shredded cheddar cheese right away, or, you can add during the last 5-10 minutes of baking time

  6. Bake 30-35 minutes until top is browned and edges are done
