Ingredients:
To wash wings:
3 1/2 - 4 lbs wings
cold water
vinegar
1 lemon, or lemon juice
Seasoning blend:
1 1/2 tsp salt
1 1/2 tsp pepper
1 1/2 tsp chili powder
1 1/2 tsp paprika
1 1/2 tsp garlic powder
Honey BBQ sauce:
1/4 C butter
1 C BBQ sauce (we use Sweet Baby Rays)
1/2 C honey
2 Tbsp ketchup
Buffalo Sauce:
1/2 C Ketchup
1/3 C franks red hot sauce
1/2 C butter
2 Tbsp honey
Directions:
Wash wings in equal parts cold water and vinegar + lemon juice. Allow wings to soak for 20-30 minutes, then drain. Pat dry with paper towel
Preheat oven to 425 deg. Line a baking sheet with parchment paper or a silpat
Combine seasonings in a small bowl and sprinkle 1/3 of it on all chicken pieces. Continue tossing wings and slowly adding remaining 2/3 of seasoning blend until all wings are coated
Line wings on a baking sheet and bake for 20 minutes. Flip wings and return to oven for another 25 minutes
While wings are baking, make honey BBQ sauce by melting all ingredients in small sauce pan until incorporated and allow to come to a simmer
Immediately upon simmering, decrease heat to low and continue simmering for 10-15 minutes
When wings have finished baking, place them into a large bowl and toss in honey BBQ sauce until fully coated
Replace parchment paper and return wings back onto it, baking for an additional 7-8 minutes, or until the sauce is bubbling and has caramelized
Allow to cool on baking sheet for 5 minutes before serving
