Ingredients:
2 1/2 C oatmeal flour (blend)
1 C applesauce
2 ripe bananas, mashed
2 eggs
3/4 C sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 heaping C strawberries or other fruit, diced (in winter, sub fresh fruit with frozen berry blend of strawberries, blueberries, raspberries, and blackberries)
Directions:
Grind oatmeal into a soft flour in blender. Add additional 1/4 C regular flour if you need to increase the 'fluffiness' of these muffins. I have also added 1-2 scoops of vanilla or plain protein mix to increase the protein content for the kids
Remove oatmeal flour and add all wet ingredients except berry mix
Add flour to wet ingredients. Fold in diced berries
Divide into mini muffin tins and bake at 400 deg for 15-18 minutes or until browned on top
Yields 36 mini muffins
