This recipe is actually a chicken pot pie filling served over biscuits, however, Lane thinks that this is probably a meal served years ago like when Billy from Where the Red Fern Grows grew up (1920's). Since he coined this term when he was about 5, we have always called this meal "Billy Biscuits".

Ingredients:
1 Tbsp butter or oil
1 Tbsp flour
4 C chicken broth
4 chicken breasts
2 Tbsp Watkins cream of chicken soup mix
1-2 C each of: carrots, peas, corn, green beans (any vegetable) - can use canned, fresh, or frozen
1 container of Bisquick biscuits flaky layers (or butter swim biscuits), bake according to package
Directions:
Add butter to dutch oven on stovetop. Once melted, add flour to make a roux. Add broth and whisk until incorporated
Add chicken breasts, cover on med-low heat for 20 minutes until cooked through
Remove chicken and shred. Add vegetables into dutch oven and return chicken to pot
Add cream of chicken soup mix and cook together for 10-15 minutes on low setting until all is cooked through. Add salt to taste
Serve over biscuits
