Ingredients:
1 C butter
2 1/4 C brown sugar
1/2 tsp salt
1 C light corn syrup
1, 14oz can sweetened condensed milk
1 tsp vanilla
Direction:
Melt butter in saucepan. Add sugar and salt. Blend in corn syrup, then gradually add milk
Cook adn stir over medium heat until it reaches 240-245 deg (usually this stage takes 12-15 minutes)
Stir in vanilla (mom adds vanilla right away)
Pour into buttered 9x13 pan. When cooled, wrap in wax paper
Notes:
I stopped at 240 deg and caramels were slightly too soft and sticky to the wax paper. Stir for longer at 240 deg and get temp closer to 245 deg before removing from stovetop
Yield: Approx 80 caramels
