Ingredients:
1/2 red onion, diced
4 Tbsp diced black olives
1/2 red pepper, diced
1 jalapeno, diced
2 cloves garlic, minced
1/4 C artichokes, diced
1 1/2 lbs ground chicken
1/2 tsp paprika
1/2 tsp chili powder
1 tsp oregano
1 Tbsp parsley
1/2 tsp red chili flakes
1/2 tsp cumin
1/2 tsp celery salt
1/4 tsp ground sage
2 Tbsp bread crumbs
1 egg
Directions:
Add all veges in medium sauce pan and sauté until translucent. Remove and allow to cool
Mix veges into raw chicken and mix thoroughly. Add all seasonings/dry ingredients and egg. Form into patties
Place into refrigerator for 30 minutes prior to cooking
For meal prepping, I double or triple the recipe. I use an ice cream scoop and portion them into a greased muffin tin. Once frozen, then place into a freezer safe bag or food save them. Freeze in portions appropriate for your family
Yields 8-10 patties
