Chocolate Zucchini Bread

Ingredients:

3 eggs

2 C sugar

1 C oil (Dawn uses 3/4 C oil and 1/4 C buttermilk)

2 C grated zucchini

1 tsp vanilla extract (I use 2)

3 C flour

6 Tbsp cocoa powder

1 tsp dry instant coffee

1 tsp baking soda

1/2 tsp baking powder

handful of chocolate chips


Directions:

  1. Preheat oven to 325 deg

  2. Combine all dry ingredients into a medium bowl

  3. Mix all wet ingredients in stand up mixer, then add in dry ingredients

  4. Bake for 1 hour

Yield: 2 loaves
