Ingredients:
3 1/2 C bread flour
2 1/2 C shredded cheddar cheese
2 jalapenos, seeded and coarsely chopped (I rarely use)
1 jalapeno, sliced into rings, divided (I rarely use)
1 Tbsp kosher salt
2 C warm water
2 1/3 tsp yeast
1 Tbsp oil
Directions:
Combine dry ingredients and cheese into large bowl. Add in yeast and water
Mix dough until incorporated and place in a greased bowl. Fold the dough by pulling from one side and pulling it up into it's center. Rotate the bowl each time for a total of approx 8 folds
Cover bowl and let rise for 60 minutes, or until doubled in size
Preheat oven to 450 deg and place dutch oven with lid inside oven right away and let it heat up for 30 minutes
Fold dough again by pulling out from the side and into it's center, rotating the bowl again for a total of around 8 folds. Let dough rest for an additional 30 minutes
Lightly flour a clean work surface. Peel dough out of the owl and fold dough into the center for a total of 8 folds again. Flip dough over and transfer to piece of parchment paper
Brush top of dough with oil and sprinkle with remaining 1/2 C cheese. Score dough with a large X through the top. Arrange jalapenos on top, if using
Add dough and parchment paper to dutch oven. Cover with lid and bake for 30 minutes. Remove lid and bake for 20-30 more minutes until the bread is golden brown
Slide bread out to cool on wire rack for 1 hour before slicing
