Easter Chocolate Cake

Ingredients:

1 C milk

1 Tbsp vinegar

3/4 C canola oil

2 large eggs

1 C brown sugar, packed

1/2 C powdered sugar

1 C flour

3/4 C unsweetened cocoa powder

1 Tbsp baking powder

1 tsp salt

1/2 C hot coffee


Directions:

  1. Preheat the oven to 320 deg

  2. Grease and line a 20 cm (8 inch) circular cake tin with baking paper

  3. In a large mixing bowl, whisk together milk and vinegar. Allow to sit for 5 minutes until thickened. Whisk in oil, eggs, brown sugar and powdered sugar

  4. Sift over flour, cocoa powder, baking powder and salt. Whisk together until well combined. Whisk in boiling coffee

  5. Pour into prepared tin and place in the lower half of the oven. Bake for 55-60 minutes or until well risen and a skewer inserted in the center of the cake comes out clean

  6. Allow to cool in the tin for 20 minutes before transferring to a wire rack to cool completely
