Homemade Pudding Mix

Ingredients:

3 C sugar

2 C cornstarch

3 C instant dry milk powder

1 tsp salt


CHOCOLATE: 3/4 C cocoa powder + 1/2 C more sugar

VANILLA: 1 tsp vanilla extract when making

1/4 C unsweetened cocoa powder


*Whisk all ingredients together and store in an airtight container until ready to use


To prepare pudding (equivalent to 1 box):

  • 3/4 C dry mix

  • 2 C cold milk

  • 1 tsp vanilla extract


Directions:

  1. Add dry mix to a bowl, slowly whisk in cold milk for 2 minutes until thickened. Can refrigerate 5-10 min until set.

  2. Can also bring to a boil for 1 minute. Reduce heat to low and simmer while stirring constantly until thickened

  3. Pudding thickens as it cools, store in refrigerator


To make pudding ice cream: Add 1 C mix with 1/2 C powdered sugar, 4 C whole milk, and 1/2 C heavy cream until smooth. Pour into ice cream maker
