Ingredients:
3 1/2 C flour
1 Tbsp salt
4 eggs
1 Tbsp olive oil
1/3 C + 1-2 Tbsp water
Directions:
Mix flour and salt together. Add eggs, oil, and half of the water
Mix slowly, adding more water until the dough can be formed into a ball that holds together. Avoid letting it get too wet or it will be hard to work with
Knead for 3 minutes, or until the dough becomes smooth and elastic
Cover with a clean towel and allow to rest for 30 minutes
Divide dough into 4 sections
Roll out one section so it fits into the pasta attachment on mixer. Put dough through #1 setting 5 times
Changes to #2 setting and put dough through 2-4 times. Repeat on each setting through setting #5
Repeat with other 3 portions of dough
Cut into desired shapes or noodle width, or, run through noodle attachment for spaghetti, fettuccini, etc
Place in salted, rapidly boiling water for 2-3 minutes until done (watch closely as sometimes it doesn't even take this long if they are fresh)
Can lay noodles out on floured cookie sheet, separated, and allow to dry for future use. We always make and eat all of ours immediately
