Homemade Pretzel Dough

Use for buns, bites, large fluffy pretzels.




Ingredients:

1 1/2 C warm water

2 Tbsp brown sugar

2 tsp yeast

4 Tbsp butter, melted

2 tsp kosher salt

4 1/2 C flour


For boiling:

10 C water

1/2 C baking soda


For baking:

1 large egg, for brushing

Kosher salt, for sprinkling


Directions:

  1. Mix water, sugar, and yeast. Allow to bloom for 5 minutes

  2. In a large bowl, mix flour and salt. Add water/yeast mixture and melted butter. Knead to incorporate for 5-10 minutes

  3. Cover and let rest in a greased bowl for 45-60 minutes or until doubled in size

  4. Preheat oven to 450 deg

  5. Shape your dough:

Buns: Divide dough into 8-10 portions and form into hamburger buns. Rest for 20-30 minutes


Bites: Divide dough into sections and roll each into a log approx 1" in diameter and cut into 1" pieces. Can boil immediately


Large Pretzels: Divide dough into 8-10 sections and roll each into a 1" by 6" long long. Form into a twisted pretzel shape. Rest for 15 minutes

  1. Bring water and baking soda to a low boil in a large pot. Modify your temperature down so that no bubbles are breaking the surface (bubbles cause divots in your bun's surface)

  2. Drop dough into water in batches for 30 seconds on each side. Use a slotted spoon to remove to allow dough to drain some before placing on the baking sheet

  3. Brush with egg wash and sprinkle wiht kosher salt. Score hamburger buns before baking

  4. Bake for 8-10 minutes (large pretzels), 13-15 minutes (buns and bites)
