Ingredients:
1 C flour
3/4 C oatmeal
1 C brown sugar
1/2 C butter
1 tsp cinnamon
4 C rhubarb, diced
1 C sugar
1 C water
2 Tbsp cornstarch
1 tsp vanilla extract
Directions:
Preheat oven to 300 deg
In a medium bowl, mix flour, oatmeal, brown sugar, butter, and cinnamon
Put 1/2 of mixture into a greased 9x9 pan. Set aside other 1/2 of mixture
Add rhubarb to pan
Boil water and sugar until sugar is dissolved. Add cornstarch and stir thoroughly to avoid clumping. Add vanilla
Pour mixture over rhubarb
Top with remaining 1/2 oatmeal mixture
Bake for 1 hour 20 min
Tips: When I make these in the foil throw-away tins (8x8 size) I use 9 C rhubarb and a triple batch of the simple sugar and flour mixtures. This makes 4, 8x8 pans
