Rhubarb Tort

Ingredients:

1 C flour

3/4 C oatmeal

1 C brown sugar

1/2 C butter

1 tsp cinnamon

4 C rhubarb, diced

1 C sugar

1 C water

2 Tbsp cornstarch

1 tsp vanilla extract


Directions:

  1. Preheat oven to 300 deg

  2. In a medium bowl, mix flour, oatmeal, brown sugar, butter, and cinnamon

  3. Put 1/2 of mixture into a greased 9x9 pan. Set aside other 1/2 of mixture

  4. Add rhubarb to pan

  5. Boil water and sugar until sugar is dissolved. Add cornstarch and stir thoroughly to avoid clumping. Add vanilla

  6. Pour mixture over rhubarb

  7. Top with remaining 1/2 oatmeal mixture

  8. Bake for 1 hour 20 min


Tips: When I make these in the foil throw-away tins (8x8 size) I use 9 C rhubarb and a triple batch of the simple sugar and flour mixtures. This makes 4, 8x8 pans
