Strawberry Rhubarb Freezer Jam

Ingredients:

4 C fresh cut rhubarb, diced

2 C fresh strawberries

1.5 C white sugar

Additional 1.5 C white sugar


Directions:

  1. Cut the strawberries into small pieces. Use a potato masher to crush them up a bit more

  2. Mix the rhubarb and 1.5 C sugar in a large bowl and let sit for a few minutes to juice up the rhubarb

  3. Combine the rhubarb/sugar mixture and the crushed strawberries into a large pot

  4. Bring to a rolling boil and boil for 3 minutes

  5. Add an additional 1.5 C sugar into the pot

  6. Once the sugar dissolves, bring back to a full rolling boil for 4-5 minutes longer

  7. Spoon the jam into jars using a funnel. Wipe the jar rim and seal tightly by twisting on a lid and a ring

  8. You can then can the jam or freeze for longer shelf life


Makes approx 3 pints
