Ingredients
2lb venison, whole muscle
2 Tbsp Wild Game seasoning
16 slices bacon
3/4 C BBQ sauce
Marinade
3 Tbsp EVOO
2 Tbsp Worcestershire sauce
1 Tbsp soy sauce
1 tsp garlic powder
1 tsp onion powder
Directions:
Cut venison backstraps into small bite-sized pieces
Marinate meat for 4+ hours
Preheat smoker 300 deg
Remove meat from marinade and wrap each piece in a 1/2 slice of bacon and secure with a toothpick
Place pieces on a rack-lined tray onto the smoker for 30-35 minutes until bacon is well rendered
Based generously with BBQ sauce on the smoker for 10 minutes
Rest 5 minutes before serving
