Smoked Venison Bites

Ingredients

2lb venison, whole muscle

2 Tbsp Wild Game seasoning

16 slices bacon

3/4 C BBQ sauce


Marinade

3 Tbsp EVOO

2 Tbsp Worcestershire sauce

1 Tbsp soy sauce

1 tsp garlic powder

1 tsp onion powder


Directions:

  1. Cut venison backstraps into small bite-sized pieces

  2. Marinate meat for 4+ hours

  3. Preheat smoker 300 deg

  4. Remove meat from marinade and wrap each piece in a 1/2 slice of bacon and secure with a toothpick

  5. Place pieces on a rack-lined tray onto the smoker for 30-35 minutes until bacon is well rendered

  6. Based generously with BBQ sauce on the smoker for 10 minutes

  7. Rest 5 minutes before serving
