Snickerdoodle Cheesecake Bars

Delicious recipe, shared by a patient


























Ingredients

CRUST

26 golden oreos

4 Tbsp melted butter


CHEESECAKE layer

8oz cream cheese, room temp

1/2 C sugar

1 large egg

1 tsp vanilla


COOKIE layer

16.5 package pre-made sugar cookie dough, or, homemade sugar cookies (she uses half of the tube)

3 Tbsp sugar

1/2 tsp cinnamon


Directions:

  1. CRUST: Preheat oven to 350 deg. Line 9x9 with foil and spray

  2. Pulse oreos in food processor until crumbs are formed, add in melted butter and pulse until combined

  3. Firmly press into bottom of 9x9

  4. CHEESECAKE: Beat cream cheese in mixer until creamed. Add in sugar and mix thoroughly. Add in egg and vanilla. Pour on top of crust layer and set aside

  5. COOKIE: Mix cinnamon and sugar in a small bowl. Roll out small portions of the dough into cookies, then coat each side in the cinnamon/sugar layer. Place on top of cheesecake layer until covered with cookies

  6. Sprinkle remaining sugar/cinnamon over the top

  7. Bake 40-45 min until middle is set and edges are golden brown

  8. Allow to cool for 30 min, then refrigerate for 2-3 hours until they are set

  9. Cut into bars, store in fridge in airtight container
