Sourdough Sandwich Loaf - 13 hour

Uses Aliquot method. 13 hours from feeding starter to eating

325g water
150g starter
20g honey
20g oil (olive?)
500g flour
10g salt
Directions:
Mix all
Rest 30 min then Stretch and Fold
Rest 30 min and Coil folds x3 each > dough should be tight, well-shaped, not sticking
Add a portion for aliquot and let dough rise until doubled
Flatten into large rectangle, 1/3 folds and roll into loke into a baking pan
Let rise above baking pan
Score, spray, and bake
Bake in 400 deg pre heated oven COVERED for 30 minutes
Reduce to 375 deg UNCOVERED for 15 minutes
Internal temp should be 200-205 deg
Wait 1-2 hours before slicing
Timeline for eating at 6pm:
5:00 am Feed starter
9:00 am MIX
9:30 am stretch and fold 1
10:00 am coil fold 1
10:30 am coil fold 2
11:00 am coil fold 3
Rise to double - 2-4 hours
3:00 pm Bake
4:00 pm done
6:00 pm EAT
