Ingredients:
2 packages pot sticker or won ton wrappers
1lb ground pork
2 Tbsp soy sauce
1 Tbsp sesame oil
1 tsp grated ginger
pinch of sugar, salt, and pepper each
2 Tbsp chives
1 egg
1 Tbsp cornstarch
1 can water chestnuts, finely chopped
1 clove garlic, minced
Dipping Sauce:
1/2 C soy sauce
1/4 C white vinegar
1 tsp chili oil or sriracha
2 tsp chives
Directions:
Combine sauce ingredients into a mason jar. Cover and shake. Refrigerate until needed
Combine all filling ingredients into large bowl
Fill pot sticker wrapper with 2 tsp of pork mixture. Brush edges with water
To fold, press in half and be sure to push out any excess air. Continue folding along edges until fully sealed
Stand dumpling up so folded side is up and press slightly so that they stand up nicely
Dumplings may be frozen at this point for future use
To cook: in a medium fry pan over medium high heat, add small amount of oil and coat pan. Place 4-6 dumplings at a time in the pan and brown on one side. Add 1/2 - 1 C water to pan and cover for 5 minutes (6-7 if dumplings are frozen). Remove cover
When water has evaporated, then turn dumplings to allow other side to brown. Remove from pan and serve
